I'm a big fan of celery, especially in smoothies.  My Vitamix blender makes it easy to thoroughly blend the stalks down to puree.  I prefer organic celery given pesticides get sprayed directly on the part of the plant we eat.  If you can't find orgainc(or it's just too expensive) then use a fruit and veggie wash like "Fit" to clean pesticides and bacteria that water alone just wont remove.  You can find one in most grocery stores, or request that they carry one.
