    What Does Russell do in the AM?

    For someone whose nickname is “Rush,” finding peaceful moments hasn’t always been easy. But over the past 15 years or so I’ve found that meditation is a great way to connect with the peace and tranquility that’s in my heart. That’s why every morning when I wake up, I roll over, light a candle and then try to spend 20 minutes in meditation. Sometimes I might end up going for forty minutes, but twenty minutes is my minimum. There are mornings I feel extra tired or get up late, but I always try to fight through whatever obstacles I perceive are in my way and make the time for meditation.

    Once I’ve meditated, I go downstairs and have a green juice (spinach, parsley, kale, cucumber and apple). After that, no matter what I’ve got on my plate for that day, I feel like I’m operating out of a peaceful, calm and contented state, instead of a rushed and needy one.

    Summer Squash

    I made the most amazing dish last night. If you have an abundance of yellow squash you must try this!

    Spicy Summer Squash

    5 Yellow Squash (sliced thin)
    1 small red onion (chopped)
    1 Jalapeno (chopped without seeds)
    3 TBL Coconut Oil
    1 15.5 oz can of White Beans
    Salt and Pepper to taste

    In a pan over medium combine all ingredients except the beans. Cook until mixture is soft. Then add the beans and cook for another 10 minutes!
