    Amazing Quinoa Salad

    I am always on the lookout for good salads! I was ecstatic when I found this quinoa salad recipe. Quinoa is loaded with protein! Everyone at the party where I served it asked for the recipe!

    Ingredients: 1 cup quinoa, 2 cups water, 1/4 cup extra-virgin olive oil, 2 limes, juiced, 2 teaspoons ground cumin, 1 teaspoon salt, 1/2 teaspoon red pepper flakes, or more to taste, 1 1/2 cups halved cherry tomatoes, 1 (15 ounce) can black beans, drained and rinsed, 5 green onions, finely chopped, 1/4 cup chopped fresh cilantro, salt and ground black pepper to taste

    Directions: 1. Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes. Set aside to cool. 2. Whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl. 3. Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro; season with salt and black pepper. Serve immediately or chill in refrigerator.

    Dream Big Enough?

    Are you dreaming big enough? If you had all the right things in place such as, enough money, enough schooling, the perfect weight, the perfect lover, the perfect house etc. What would you want to do with your life? Imagine all those things are in place.

    Stop waiting for all the right circumstances. Are you thinking and dreaming big enough? If you can imagine it in your life, you can live it! You can really have the biggest dreams in the world if you just think you can!

    Put the Glass Down

    Another inspirational story…

    A psychologist walked around a room while teaching stress management to an audience. As she raised a glass of water, everyone expected they’d be asked the “half empty or half full” question. Instead, with a smile on her face, she inquired: “How heavy is this glass of water?”

    Answers called out ranged from 8 oz. to 20 oz. She replied, “The absolute weight doesn’t matter. It depends on how long I hold it. If I hold it for a minute, it’s not a problem. If I hold it for an hour, I’ll have an ache in my arm. If I hold it for a day, my arm will feel numb and paralyzed.

    In each case, the weight of the glass doesn’t change, but the longer I hold it, the heavier it becomes.” She continued, “The stresses and worries in life are like that glass of water. Think about them for a while and nothing happens. Think about them a bit longer and they begin to hurt. And if you think about them all day long, you will feel paralyzed – incapable of doing anything.”

    It’s important to remember to let go of your stresses. As early in the evening as you can, put all your burdens down. Don’t carry them through the evening and into the night. Remember to put the glass down! -author unknown

    Neem Rocks

    It seems like every time someone has to go to the doctor they are always recommending Neosporin or Bacitracin. I have been looking for a natural antibiotic cream forever. This week I finally found one. It is TheraNeem Triple Neem Ointment. It is a great alternative and now my choice when someone in the family needs an antibacterial cream.

    Neem is known to be anti-bacterial, anti-viral, anti-fungal, antiseptic, and anti-parasitic.

    Watermelon Salsa

    This recipe is SO amazing! Serve with blue chips!

    Ingredients

    1 cup diced unpeeled nectarine

    2 jalapeño peppers, seeded and minced

    3 tablespoons fresh
    lime juice

    2 teaspoons orange zest

    2 teaspoons grated fresh ginger

    2 cups seeded and diced watermelon

    1/2 cup chopped fresh cilantro

    1/3 cup diced red onion

    Preparation
    Stir together first 6 ingredients in a large bowl; let stand 15 minutes. Add watermelon and next 2 ingredients, and gently toss to coat. Serve immediately, or cover and chill up to 24 hours. Eny!

    30 Minute Run

    There are not many things I know for sure but this is one of them..

    If you suffer from sadness, worry, anxiety or fear, if you can just get out the door and run for 30 minutes, 95% of your problems will fade away.

    Now if I can just do it every single day I will be all set!
