I love this recipe! It’s quick to make, vegan and so good that friends are surprised to hear that it’s mostly peas!
Pea and mint “pesto”
1 10-ounce package of frozen peas, thawed
1 tablespoon of chopped fresh mint
2 tablespoons extra virgin olive oil
salt and pepper
Process the peas in a food processor until they’re roughly chopped. Stir in remaining ingredients.
Serve with a sliced, toasted bagette or sliced vegetables.
The recipe is very forgiving. I often don’t measure things when I cook and it comes out great every time.
